Chicken Enchiladas with Avocado Sauce

Ingredients:

18 Tortillas, fried on one side only
2 Medium Hass Avocados ripe.
8 Ounces grated cheese.
1 Chicken breast, cooked and shredded.
¼ Cup milk.
1 Piece of Onion.
½ Onion, chopped.
1 Tablespoon heavy cream.
Mayonnaise, to taste. Optional.
Juice of ½ key lime.
1 Garlic clove.
Oil.

Preparation:Peel Hass Avocados, remove seeds and blend pulp with remaining ingredients, except chicken, cheese and chopped onion. In a small sauce pan, heat one tablespoon oil, and sauté blended sauce.

Dip each tortilla in sauce, fill with shredded chicken, roll up, and place, seam side down on serving plate, sprinkle with grated cheese and chopped onion. Serve immediately.
